Italy is the world’s largest producer of wine! Italian wine has been produced for over 4,000 years, and is considered the perfect environment to grow wine, largely due to the country’s climate (which is perfect for viticulture). … So much so, that the country was called ‘Oenotria’ (it’s translation meaning ‘the land of wine’).

We will hold a special seminar featuring 6 fine Italian wines, chosen especially to match our gourmet dinner at our Upscale venue: Legato

Located on the 15th floor Legato has one of the best panoramic views of Shibuya!  The atmosphere is chic, with an updated old-world interior that is offset by the breathtaking view of the Tokyo skyline from the floor-to-ceiling windows surrounding the dining and bar area.

Apéritivo: Cielo Cuvee Privée Spumante

Fine bubbles caress the palate, making it deliciously light and playful!

Grape Variety: Garganega 95%, Moscato 5%

Wine: Cardeto Orvieto Classico, Umbria, 2017

Grape variety: Trebbiano 45%, Grechetto 40%, Chardonnay15%

Straw yellow in color, with aromas of white fleshed fruit and hawthorn flowers.

Pasta: Creamy Black Truffe Gnocchi

Wine: Chianti DOCG San Martino, Trambusti, 2018

Grape Variety: Sanjovese 90%, Canaiolo Nero 10%

Chianti is a versatile wine, suitable for every occasion!

Fish: Grilled Prime Salmon with tapenade sauce

Wine: Le Quatro Terre Piemonte Bianco DOC, 2019

Grape Variety: Chardonnay 60% and Nebbiolo 40%

Fruity with an attractive minerality. Crispy taste, with a delicious and rich mouthfeel.

Main: Prime Beef Hanger Steak with Season Vegetables

Wine: Barolo DOCG, Sartirano Figli, Piemonte, 2016

Grape Variety: Nebbiolo 100%

Spices and dried flowers on the nose: smooth and mouth-filling, with sweet tannins. Great structure!

Dessert: Chocolate Cake

Wine: Moscato, Bluemarine, 2010, Sicilia

Grape Variety: Moscato 100%

Intense straw yellow. With a delicate Muscat aroma and hints of ripe fruit. Sweet and balanced. Aftertaste has notes of candied fruit. Ideal with desserts!

The wine expert:

Meet Frédéric Cayuela, a passionate wine lover and educator in Japan.

Frédéric is born in the Roussillon wine region located in south of France in the boundaries of Spain.With over 10 years of experience in the wine industry, Frédéric possesses a seasoned and a uniqueinternational background. He worked as a wine advisor for the château Nadal Hainaut in France,and, as a wine merchant, consultant, and educator in Taiwan and Singapore.

Now settled in Tokyo, Frédéric is a devoted Roussillon wine ambassador and shares his valuableknowledge about his native wine region, and his expertise on other French and worldwidewinemaking regions as he obtained numerous international credentials under his belt.

His ultimate challenge is join the rank of the very few Master of Wine in the world.  As a wine educator, he wish to share more of his knowledge and passion for wines to others, and it is important to do it not only in an academic way, but instead in both an easy-going practical learning and a unique experience.

Here few of his accomplishments in the wine industry:

• Diploma WSET holder. (DipWSET)
• Graduated from Rivesaltes Sch. Of Agriculture. (DWS)
• Certified Specialist of Wine from Society of Wine Educators (CSW)
• French Wine Scholar Program Instructor (FWS)
• Guide Hachette Judge for south of France category
• Finalist 2nd place (2014) – Team winner (2012) during the professional Dionysiades wine tasting contest in France.
