Michelin-Star Chef James Kent Collaborates with The Park Hyatt Tokyo

Tokyo’s Park Hyatt Hotel New York Grill restaurant has just launched a special culinary collaboration with Michelin-Star Chef James Kent from November 30 to December 4.
With the recent opening of Japan’s international borders, this special collaboration offers diners at the Park Hyatt Hotel to enjoy the vibrancy of New York City.
Chef Kent of the famous fine dining restaurants “Crown Shy” and “SAGA,” both of which have achieved Michelin-star status in New York City, together with the culinary team at Park Hyatt Tokyo, offer a special collaborative menu that you won’t want to miss.
Showing utmost dedication to his craft, on the day of his arrival in Japan, Chef James Kent headed straight to the fish market to source the finest quality produce to serve.
The five course dining experience beings with tuna otoro wrapped in a shiso leaf, pickled shimano apple and shiitake mushroom, diced tuna loin, kiwi, pickled chillis and puffed rice, tuna toast, spicy chilli crunch with uni, and a seaweed broth with Japanese clam, pickled pumpkin and daikon. These Japanese autumn ingredients are beautifully presented in a bento box style platter featuring Japanese autumn leaves.
Kaviari Kristal Caviar, creme fraiche, persimmon relish and iberico Ham follows. When the Metropolis Magazine team joined this dining experience, the dish was accompanied by a 2020 Wolffer Estate Long Island Rose from a vineyard Chef James Kent would often play in as a child. This special menu showcases not only the history of New York City, but is beautifully entwined with the many memories of Chef Kent’s childhood, making the experience even more charming.
A king crab, braised mushroom, mustard spinach brown butter Japanese clam bisque is followed by an exquisite main of grilled Akita beef sirloin, braised wagyu beef tongue, roasted sweet potato, Fuji apple with black garlic butterscotch. Served with Frenna bread, Chef James encourages diners to soak up the sauce with the bread, claiming that there is “no wrong way to eat this dish”.
A cloud-like toasted apple pie meringue with mikan orange vanilla sorbet and honey is the perfect end to the dining experience. This is served with a salted pretzel caramel candy with a savory note akin to red miso.
