Akatsuki Brewery makes beer based on the concept of “friendly to people and nature”.

Akatsuki Brewery was established in Kyodo, Setagaya Ward in 2016 as the first brewery in Setagaya. It is a small brewery, and brews unfiltered beer. Unfiltered beer has the advantage of being highly nutritious and rich in umami, but it is slightly different each time because the yeast continues to ferment. Akatsuki Brewery currently has two stores: one in Ginza Shiba-Daimon.

Akatsuki Taps Japan Ginza

Opened on December 26, 2018, as the first Tokyo flagship of Akatsuki Brewery. The concept is “Akatsuki beer that goes well with Japanese food.” In addition, as a store that conveys the charm of Tohoku food, it serves oysters and seafood from Sanriku, and livestock products from Tohoku. It proposes a new lifestyle with beer and food.

Akatsuki Brewery’s beer should be savory, just like Japanese food. Rather than the bitterness, it tries to create a gentle aroma, complex flavor, and a relaxed feel that goes well with the Japanese ingredients. Even people who don’t like beer have rated it as easy to drink.

The ingredients of Akatsuki Taps are mainly sourced from production areas with which the restaurant has a close relationship. Wakame seaweed from the Taro Fishery Cooperative in Miyako City, Iwate Prefecture, guinea fowl and Hakkinton pork from Hanamaki City, chicken from Sumita Bird, oysters from Rikutakada Hirota Bay and fish from Sanriku. 

The owners wanted to make beer and food in search of umami. They also wanted to use Tohoku ingredients. With this in mind, they set the food theme as “Tohoku Roast” and created roasted chicken and pork dishes from Fukushima, Iwate, and Aomori prefectures. Ingredients are generously rubbed with homemade spice sauce. In order to make the roast even more delicious, they added a soy sauce with concentrated umami. 

Akatsuki Taps Japan Shiba-Daimon “Beer Robata”

Opened on April 3, 2019. Akatsuki Brewery’s second flagship in Tokyo is based on the concept of “robata and delicious beer.” Akatsuki Taps Beer Robata is a place where visitors can experience rural Japan in the confines of Tokyo, surrounded by charcoal at the hearth. In addition to craft beer from Akatsuki Brewery, it also offers carefully and gentle healthy dishes that incorporate plenty of the blessings of Satoyama and Satoumi.

The shop in Shiba-Daimon makes gentle beers that go well with Japanese food under the theme of “naturally friendly to people”. Shibadaimon Beer Robata serves charcoal-grilled charcoal-grilled fish, seasonal fish, chicken, pork, and beef, paired with Akatsuki beer. Ingredients are procured from producers who have been involved in support activities for the Great East Japan Earthquake, such as guinea fowl and Hakkinton pork from Hanamaki City, Higashi Iwate Prefecture, Masaki wakame seaweed from the Taro Town Fishery Cooperative in Miyako City, and oysters and scallops from Hirota Bay. Enjoy the aroma of charcoal and the grain of beer.

Dragon Eye

Akatsuki Brewery currently has four beer products, including one named Dragon Eye. During the limited period from late May to early June, the lake near the summit of Hachimantai melts and looks like the eyes of a dragon, hence the name Hachimantai Dragon Eye. iAkatsuki Brewery Hachimantai Factory’s beer is named Dragon Eye (Kagami-numa), a tourist attraction at the top of Hachimantai, in honor of the rich people and nature of Hachimantai
