Chocolate makers ChokoReko have raw chocolate down to an art…and a science. What the heck is raw chocolate you ask? It’s the uncooked bean or nib (also known as cacao) that is never heated above 45c during the production process. Also key is the use of palm sugar, a low GI alternative to the usual white stuff. Coloring is done with natural fruit powders and products are all additive-free. All that adds up to a healthy, natural option for Valentine’s Day. The exotic flavors— such as 76% cacao bitter mint, 88% bitter apple pie spice and 88% bitter basil—are delicious, intriguing… and in high-demand. Although items sell out quickly online, the company holds regular events in central Tokyo and has a shop in Saitama.
