A recent visit to the popular Tokyo branch of Trader Vic’s restaurant acquainted us with an offbeat cooking appliance: the Chinese oven. The apparatus consists of a wood-burning hearth connected to a 2m-tall, chimney-like barrel that’s topped by a steel grate. Cuts of meat—including Trader Vic’s signature grain-fed Black Angus from Australia—are placed in the barrel, where they’re heated and smoked. The chefs use cherry wood for their oven and, after trying one of the sirloin steaks, we can attest to the intense, smoky flavor—unlike anything we’ve tasted in Tokyo.
