The Hilton Tokyo is taking on a South American flavor during the Chilean Gastronomic Fair, running through June 8. Chef Matias Palomo of Santiago’s renowned Sukalde restaurant has created a lush buffet-style spread at the hotel’s Brasserie “Checkers” for both lunch (¥3,500; kids ¥2,000) and dinner (¥6,000). Among the dozens of dishes on offer are the fish soup known as caldillo de congrio, beef tenderloin al pobre, and desserts like lucuma mousse with dry meringue, and pumpkin blinis with chancaca. For an extra ¥2,772, diners can also enjoy a “buffet” of Chilean wines.
