Florence’s most celebrated chef has arrived in town as part of a weeklong showcase of cutting-edge Tuscan cuisine. Marco Stabile, the boyish chef-owner of Ora d’Aria—one of only three Michelin-starred restaurants in Florence—has made a name for himself by infusing classic regional cooking with a modern sensibility.
During the promotion Modern Tuscan Cuisine—Collaboration with Chef Marco Stabile at the resplendent Piacere restaurant in the Shangri-la Hotel, Tokyo, Stabile is offering dishes like pan-seared scallop salad with muskmelon and orange; beef tripe tortelli with butter, sage and anchovy; and braised veal cheek spiced with lime. He’s collaborating with Piacere’s chef de cuisine, Paolo Pelosi, on a series of menus at lunch (¥5,700, incl. glass of spumante) and dinner (from ¥15,000).
Highlighting the event will be gala dinner on Friday, August 3, that features eight dishes paired with Tuscan wines (¥25,000). Brunch is available on Saturday and Sunday (¥6,500), with free-flowing Ca’ del Bosco Franciacorta Cuvee Prestige spumante for an extra ¥4,500.
