In the old country, they use meticulously trained hogs and dogs to hunt for truffles, but your search for the delicacy need not be so difficult. Terres de Truffes (2-27-6 Minami-Aoyama, Minato-ku. For three months beginning in October, they will be adding new dishes to their already truffle-centric menu. The mouth-watering creations are made possible by a new shipment of white truffles from Alba, Italy—some of the rarest and most expensive in the world. The white truffle and wild rice risotto can be added to the set menu (¥15,000 for white truffles, ¥20,000 for black) for an additional ¥3,000 and the spätzle with white truffle butter is an additional ¥10,000. If you can bear the expense, dig your snout in.
