In his new English-language book, the owner-chef of Akasaka’s famed Kikunoi restaurant offers 60 “quick and healthy recipes” that “can be made using Western kitchen tools and ordinary ingredients.” Divided into straightforward chapters like “Simmered Dishes,” “Hot Pots” and “Rice and Noodles,” Japanese Home Cooking with Master Chef Murata features well-loved classics, from salmon teriyaki to sushi rice bowls to sukiyaki. A nifty supplement offers tips on preparing essentials like dashi and steamed white rice, and a brief glossary covers everything from abura-age to yaki-tofu.
