The Amuse: Flammekueche with Fromage Blanc and Onion

Alsace wine: Riesling Rebmann, appellation Alsace contrôlée, 2019

Fresh, lively, and well-balanced acidity with bright citrus fruit gives it a refined impression.

The Starter: Seared Salmon, braised lentils with bacon and sauerkraut

Alsace wine: Pinot Blanc Vieilles Vignes, Biodynamic, Domaine Etienne Simonis

Grapes: Auxerrois and Pinot Blanc

This refreshing Pinot Blanc swirls with green apple and peach fruit along with mineral notes and a touch of musk.


The Main: “Holstein” Beef Steak, mustard grain sauce, potato “baekaoffa”, seasonal vegetables

This botrytized wine has a stunning array of honey, peach, and fig flavors with invigorating acidity to balance its lusciousness. A perfect accompaniment for dessert.

The Wine Expert
Nicole Takeda is a wine educator, consultant, and sommelier who is the director of her own wine school, Wine Swirler Education. While studying and working in Bordeaux, she attained the WSET Diploma and an MBA in Wine Marketing and Management. The Wine Scholar Guild recently recognized her as a French, Italian, and Spanish wine specialist. This Latvian-Canadian loves a good Bordeaux vintage, but the wines of Rioja and the Loire Valley are the ones that have captured her heart.
