Toranomon Hills turns indoor food court into summer matsuri for this first-ever gourmet fair, running July 17 – August 31, with a lineup built entirely around beating the heat. The concept splits into two lanes, icy-cold-and-spicy on one side, gentle and soothing broths on the other, plus a handful of dishes that just defy categorization altogether.

On the experimental end, si si’s niboshi tan ice cream pairs dried sardines with butter for a flavor combo, while Nha Vietnam reworks banh mi into a chilled dessert with mango, cheese, and coconut ice cream. KOREAN IZAKAYA Jang, meanwhile, chills down the usual savory Korean pancake (jeon) and folds chocolate into the batter.

For those chasing heat with more heat, Chinese Bal Sawada’s cold mala mapo tofu brings the full Sichuan peppercorn numbness plus housemade chili oil, Hitsuji Public serves a cold dan dan noodle dish built on rich lamb broth, and Arbo ARBOL seiro offers a chilled tantanmen made with soy milk and black vinegar for something milder.

On the calmer side, riding what’s apparently dashi’s second cultural wave, Anpuku does dipping udon in a rare Hokkaido gagome kelp broth, Sudachi and Boiled Whitebait Soba (Smooth and Smooth Soba and Robata) keeps it classic with bonito stock and 100%-domestic buckwheat noodles, and Salt and Italian Il Frigio plates a chilled oden built around a whole ripe tomato suspended in salty broth jelly.
