For two nights only, Kimpton Shinjuku Tokyo is offering a special dinner as part of Taste of Iceland Tokyo 2025.

On May 30 and 31, indulge in an exclusive 7-course menu crafted by Yuho Hozumi, Chef at Kimpton Shinjuku Tokyo, in collaboration with Haflidi Halldórsson, an Iceland-certified Master Chef. This limited-time experience showcases signature Icelandic ingredients such as seafood, lamb and Ísey Skyr.

From cured Greenland halibut and redfish matsukasa-yaki to grilled lamb heart and Skyr ganache with whey caramel, each course blends tradition and innovation, with subtle Japanese influences.

Lumpfish & Capelin Roe, Waffles, Crème Fraîche & Red Onion

1st Course:
Cured and Glazed Greenland Halibut, Pickled Red Seaweed, Chive Mayo & Rye Bread Crisps

2nd Course:
Golden Redfish “Matsukasa Yaki”, Wasabi Risotto, Yuzu Foam

3rd Course:
Lamb Broth, Slow Cooked Lamb Shoulder & Shiitake

4th Course:
Grilled Lamb Heart, Fresh Sansho Pepper Sauce, Cresson Purée, Urui Leaves

5th Course:
Pan Fried Lamb Chuck, Potato Purée & Lamb Jus

Dessert:
Isey Skyr Ganache with White Chococate, Lemon Meringue, Whey Caramel & Strawberries

(佐立武士) Born in 1997, Takeshi spent their childhood in Connecticut before attending high school in both Japan and the U.S. After studying at Waseda University and SOAS University of London, they have worked as an editor for a fashion news outlet and culture magazine. Takeshi was honored with a fully-funded scholarship from the UK government, prompting their return to SOAS University of London to research Japanese queer culture.
