bills’ Japan Takes You on a Culinary Exploration of Australia

There’s something about a breakfast that turns into a second coffee, then a third, and suddenly the afternoon has arrived uninvited. Especially when the table holds something tropical and aromatic, something smoky and savory just off the grill, and a warmth that feels simultaneously familiar and entirely new. 

That’s the mood at bills Japan this spring and summer. Starting April 22, all eight locations across the country are rolling out a brand-new menu themed around Culinary Exploration from Sydney—and it’s the kind of menu that makes you want to linger.

Breakfast, But Make It a Destination

bills first earned its global reputation through breakfast, and this season the kitchen hasn’t forgotten that. 

The new additions feel like postcards from somewhere sun-drenched: a tapioca bowl fragrant with coconut and makrut lime, topped with macadamia butter and fresh mango, that lands somewhere between nourishing and indulgent.

Or a grilled mackerel dish quietly spiced with cumin and fennel seed, rounded out with jammy eggs and Japanese parsley, that makes a strong case for savory mornings done properly. 

The Dishes Worth Rearranging Your Evening For

Come dinner, the mood is a bit more considered, but never stiff. The white crab and radish salad is the standout new arrival: delicate, bright and cooling in the way only really good seafood can be. Long beloved in Sydney and long overdue on the Japanese menu, it’s the dish that reminds you why simplicity, done well, is always enough.

 For something more substantial, the seared rump steak with salsa verde holds its own, and the baked ricotta, peach and tomato salad is the kind of thing you order, telling yourself it’s a starter and then find yourself slowly protecting from the rest of the table.

Don’t Skip Dessert

The kinako madeleine is this season’s quiet triumph. Warm, nutty, faintly crisp at the edges, paired with a salted passionfruit and lime curd that cuts through the richness just when you need it to. It’s available all day, which is either very generous or very dangerous, depending on your self-control. 

The pineapple tart with coconut semi freddo and the dairy-free dark chocolate cashew mousse round things out for those who like their endings either bright or deeply satisfying.

Drinks That Earn Their Place on the Table

bills Japan has gone quietly ambitious on the beverage front this season. The new house orange wine, developed with South Australian winery Delinquente, brings a golden, textured quality that works across the whole meal without demanding your attention.

For non-drinkers, a genmaicha tea crafted with longtime bills friend Hoshino Seiuchaen in Yame, Fukuoka, is the kind of thoughtful touch that makes the non-alcoholic experience feel genuinely considered rather than an afterthought.

The sake rossini remains the most fun thing on the drinks list, and the pineapple shrub is still the one you’ll find yourself thinking about on the walk home.

The menu runs through autumn, though the exact end date is still to be confirmed.
